We’ve taken the next step in our specialty coffee journey—and it smells incredible. After months of cupping, blending and experimenting, we’re now proudly roasting our own coffee beans through a local commercial roaster. It’s hands-on, thoughtful, and just how we like it. This house blend combines Brazilian beans for rich, chocolatey notes, Tanzanian for bright citrus, and Papua New Guinea for soft fruit and balance. Roasted fresh, just a few suburbs away, it’s a true expression of who we are. You’ll taste it in every cup—crafted with care, served with heart, and rooted in the vibrant Melbourne coffee scene, right here in our St Kilda café - whilst feeling like you’re in Italy.

The Brazilian beans wrap you in a velvety, chocolate‑hazelnut hug that feels like home. Then, a playful sip from Papua New Guinea dances in with juicy tropical fruit and a whisper of damp earth—anchored, yet lively. Just when you think it couldn’t get brighter, Tanzanian beans arrive like a burst of citrus and delicate florals, lifting the whole experience with fresh, vibrant clarity. It’s like a friendly chat with neighbours over morning coffee—rich, alive, and impossibly charming, perfectly echoing that local Italian‑café soul.

There’s something special about sitting in the morning light, filter coffee in hand—calm, fragrant & quietly vibrant. This one’s a gentle journey through East Africa. Ethiopian beans lead with soft florals and a touch of bergamot, almost tea-like in their elegance. From Arusha comes a plush stone fruit sweetness—think ripe peach and apricot—with a subtle cocoa warmth underneath. Then Rwanda steps in with a clean citrus brightness that lingers, light and refreshing. It’s delicate but layered, a slow sip that opens with every moment. A little bit floral, a little bit fruity—just like our corner of St Kilda.
